Why Sweeteners Wear So Many Names

Food manufacturers are required to list ingredients in descending order by weight, which means a heavily sweetened product can spread its sugar across five or six different names — pushing each one lower on the list and making the product appear less sweet than it actually is. Recognizing those aliases is a practical skill for anyone trying to understand what they're eating.

Since 2020, the FDA has required most food labels to include a dedicated "Added Sugars" line under total carbohydrates, expressed in grams and as a percentage of the daily value. Added sugars

Sugars and syrups added to foods during processing or preparation, distinct from naturally occurring sugars in whole fruits or dairy. The FDA requires these to be listed separately on Nutrition Facts labels.

Sucrose

The chemical name for common table sugar, composed of equal parts glucose and fructose bonded together. It is derived from sugar cane or sugar beets.

Fructose

A simple sugar found naturally in fruit and honey, and used commercially as a sweetener. It is metabolized primarily in the liver and, in large amounts from processed sources, may contribute to certain metabolic effects.

Glycemic index (GI)

A scale that ranks how quickly a carbohydrate-containing food raises blood glucose levels compared to pure glucose. A lower GI indicates a slower, smaller rise in blood sugar.

Sugar alcohols

A class of low-calorie carbohydrates that are partially absorbed by the body. They provide sweetness with less impact on blood glucose than sugar, but can cause gas or bloating when consumed in larger amounts.

High-fructose corn syrup (HFCS)

A liquid sweetener made by processing corn starch to convert a portion of its glucose into fructose. It is widely used in beverages, condiments, and baked goods.

The Most Common Sweeteners, Decoded

Added sweeteners generally fall into four broad categories: refined cane and beet sugars, liquid sugars and syrups, "natural" minimally processed sweeteners, and sugar alcohols or novel sweeteners. Here's what each group typically includes.

Refined Cane and Beet Sugars

Sucrose (table sugar), granulated sugar, powdered sugar, cane sugar, beet sugar, raw sugar, turbinado, and demerara are all essentially sucrose — a 50/50 bond of glucose and fructose. "Raw" varieties retain a small amount of molasses and trace minerals, but nutritionally they are nearly identical to white table sugar.

Liquid Sugars and Syrups

High-fructose corn syrup (HFCS) is corn starch processed to convert some glucose into fructose; the most common commercial versions are 42% or 55% fructose. Corn syrup is primarily glucose and less sweet. Glucose syrup, rice syrup, tapioca syrup, and malt syrup are similarly glucose-dominant. Maple syrup and molasses are less processed and contain small amounts of minerals like calcium and potassium, though not in nutritionally meaningful quantities at typical serving sizes.

"Natural" and Minimally Processed Sweeteners

Honey is roughly 40% fructose and 30% glucose, with trace antioxidants. Agave nectar is notably high in fructose — often 70–90% — which means it has a lower glycemic index but delivers a high fructose load. Coconut sugar contains a small amount of inulin (a prebiotic fiber) but is metabolized similarly to table sugar. Date sugar and fruit juice concentrates add fiber and micronutrients in whole form, though concentrates used as sweeteners are still counted as added sugars.

Sugar Alcohols and Novel Sweeteners

Erythritol, xylitol, sorbitol, and maltitol provide fewer calories than sugar and have a lower glycemic impact, but large amounts can cause digestive discomfort in some people. They appear most often in "sugar-free" and low-carbohydrate products. High-intensity sweeteners such as stevia extract (rebaudioside A) and monk fruit extract are derived from plants and provide negligible calories; they are generally recognized as safe by the FDA at typical intake levels, though research into long-term effects is ongoing.
